SUMI すみ

GENTLE ECHO
SUMI is a ceremonial matcha with a thick,
creamy texture and a naturally occurring
aroma reminiscent of chocolate. Its smooth,
rounded character brings to mind the richness
of melted vanilla ice cream, a sensory reference
to its texture rather than an added flavour.

The inspiration from zebra jasper, where irregular
charcoal-black bands wind through warm ivory,
accented by hints of icy blue. The stone’s softer,
flowing lines echo SUMI’s creamy mouthfeel, while
its darker bands reflect the depth of the matcha.

THE FEELING

SUMI has a comforting richness, reminiscent of softened vanilla ice cream, balanced by the fresh, green character of edamame. There is a quiet contrast between its creamy sweetness and its greener, more savoury notes, creating a matcha that feels both familiar and distinctive. Like its zebra jasper inspiration, its character lies in the balance between softness and depth.

Fukuroi, Shizuoka, Japan

SUMI is made from Yabukita, a Japanese tea cultivar known for its fresh green character and balanced umami. Grown in Fukuroi, Shizuoka, this selection expresses a deeper, more layered side of Yabukita, bringing together creamy richness, savoury depth, and a distinctive aromatic character.

Traditional brick-kiln milling preserves the character of the tea while contributing to its rich, full-bodied profile. Notes reminiscent of vanilla ice cream meet the fresh, savoury character of edamame, while the aroma of kaburi ka adds another dimension to the experience. Beneath its creamy opening lies a deeper green character, finishing with a clean, measured intensity.

Each harvest reflects the relationship between cultivar, growing conditions, and careful processing. In SUMI, these elements come together in a matcha that balances a soft, creamy impression with the depth and complexity of Yabukita.
